Immune Boosting Dinner

This stir-fry is packed with immune-boosting ingredients like garlic, ginger, and colorful vegetables, making it a nutritious and delicious dinner option.

Garlic Ginger Chicken Stir-Fry

Ingredients:

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)
  • Cooked brown rice or quinoa, for serving

 

Instructions:

In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.

Add the bell peppers, broccoli, snap peas, and carrot to the skillet. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.

In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using).

Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until heated through.

Garnish with sliced green onions and sesame seeds, if desired.

Serve the stir-fry over cooked brown rice or quinoa.
